A GREAT RECIPE FOR THOSE WHO WANT JUST A BITE

Love Pumpkin Pie? This great recipe gives you a Thanksgiving Treat in bite sized portions and only 41 calories rather than a typical piece of Pumpkin pie with 323 calories.

INGREDIENTS

  • 12 small won ton wrappers
  • 3/4 cup canned pure pumpkin
  • 3/4 canned pure pumpkin
  • 3/4 cup light/low-fat ricotta cheese
  • 3 packets no-calorie sweetener (Truvia)
  • 1 tsp. vanilla extract
  • 1/2 tsp. pumpkin pie spice
  • 1/2 tsp. cinnamon
  • Dash salt
  • Optional toppings: Light whipped topping and/or cinnamon

DIRECTIONS

Preheat the oven to 350 degrees. Spray a 12 cup muffin pan with nonstick spray.

Place a won ton wrapper into each cup of the muffin pan. Press it into the bottom and along sides.

Spray wrappers with nonstick spray. Bake until lightly browned...around 8 minutes.

While your won tons are baking, mix the remaining ingredients in a bowl and spoon the pumpkin mixture into won ton cups, about 2 tbsp each.

This recipe makes 12 servings.  I also think it could work with just about any filling! All the delicious fall flavors work for me. Apple, Blueberry, Pumpkin, Cherry! Yummy!
