Just because we aren't in Chicago, doesn't mean we can't have amazing deep dish pizza.

My coworkers shared this recipe with me and I immediately knew I had to try it for myself. I was a little skeptical as I was making it but the end result was SO worth it.

Here is what I used:

- 1 cup of all purpose flour

- 1 cup (two individual containers) of Icelandic Style Skyr whole milk yogurt. You can use a cup of any plain greek yogurt you like, this was just what I had in my fridge.

- 1/2 tablespoon of Italian seasoning

- 1/2 tablespoon of garlic powder

-1/2 tablespoon of onion powder

- Pinch of salt

Ok, put down the torches and pitch forks, I know that's more than two ingredients. But do seasonings really count? I say no.

Preheat the oven to 425.

In my stand mixer with a dough hook attachment, I mixed the flour, yogurt, and seasonings. It took a while for it to start to come together and I was considering adding water or an egg white. DON"T DO IT. Just let it work itself out.

Once it seems to be mostly together dump it out on a very well floured surface. Can't stress this enough. Like my coworker said "It'll ruin your day if you don't have enough flour". Knead the dough until it is all combined and smooth.

In a greased glass or metal pie pan, spread the dough evenly up around the edges. Bake at 425 until golden, and be patient. It'll take a little while, but it'll be worth it.

Take out and cover with desired toppings. Place back in oven until cheese and toppings are melted and warmed through.

Remove from pie pan, cut, and serve with a sprinkling of dried parsley on top. It's like having a slice of Chicago in your own home!
