Sunshine Bakehouse Serves Up Heartwarming Baked Goods

Sometimes you run across the most amazing people, and when I do I just have to share their stories. Today you're meeting Marcia. Marcia is known for her amazing baked goods at Sunshine Bakehouse in Litchfield.

Whether you're looking for breads, cakes, brownies or cookies, Marcia just might be the person you want to contact.

THE SUNSHINE BAKEHOUSE

The Sunshine Bakehouse is an 'occasional' cottage bakery located at 413 North Armstrong Avenue in Litchfield, Minnesota.  I asked Marcia to tell me a little bit about her baked goods and how she got into making such beautiful creations.

'My love for baking and time in the kitchen began as a young child. I was blessed to have a mother who allowed me to shadow her in the kitchen and somehow maintained her composure (most of the time).

Looking back, I suspect at some point she gave up, gave in and just surrendered to the fact that regardless of how many times she mopped up the puddles of water below me, it was just easier to allow me to stand on a chair in front of the kitchen sink and use my old-style egg beater to create mounds of bubbles that flowed up and over the edge onto the floor.

I am certain that there were times when I washed and rinsed things so long that the hot water heater groaned from an empty tank. As the years passed and I approached being a teenager, I began late-night baking sessions that often began after I'd finished devouring a good book during summer vacation!

My Mom recalls waking up in the middle of the night to the smell of chocolate chip or oatmeal cookies, and likely waking up the next morning to find a stack of "kind of washed" bowls, measuring cups, wooden spoons, and cookie sheets.

In recent years, I have confessed to just "rinsing them in very hot water and not actually washing them". I am sure my shortcut to the kitchen clean up at 3 am was just an honest attempt to finally be tired enough to go to bed (and sleep). To this day, I still struggle with insomnia!

Everything I bake is from the heart (and scratch!). I specialize in huge (4+ inch) cookies (Oatmeal Cream Pies, Lemon Crumble, Strawberry Shortcake, Almond Wedding Cake, Raspberry White Chocolate-which are always a sell-out!, Andes Mint Overload, Circus Animal Cracker, Triple Chocolate).

LUNCH LADY BROWNIES 

My"Lunch Lady Brownies" (see the Sunshine Bakehouse Facebook post for the story behind this amazing brownie!), glazed donuts, GIANT Cinnamon and Caramel Rolls (5"x7") sold on Saturday Mornings at pop-up sales from September to May, along with my sourdough loaves (Jalapeno PepperJack, Cheesy Italian),' Said Marcia Day Pohl.
