GETTING GREAT IDEAS FROM HOME CHEF RECIPES

I recently thought I would try the HOME CHEF delivery service; to get some new food ideas. I've been so impressed with the variety of foods to choose from, the fresh ingredients in just the right amounts, that I just had to share one of my favorites I recently made...with just a little 'Kelly" twist.

IT'S ZUCCHINI SEASON- I HAD TO ADD SOME TO THE RECIPE

It IS Zucchini season. My parents have zucchini coming out their ears. I wanted to make the best of it this year! I add it to everything I can; including the delicioius side dish that was in my Home Chef Box.

CHICKEN BREAST WITH CHILI CILANTRO BUTTER & MEXICAN STREET CORN

The chicken is pretty simple; except I never 'time' the chicken.' Now I'm learning that searing it on each side about 6-7 minutes will give you a fully cooked juicy piece of pan-seared chicken.  I've been cooking for 40 years without timing..but actually I kinda like using the timer.

The most amazing easy part of the chicken, was the amazing chili cilantro butter! I had my doubts at first; but it was unbelievable! and so simple to make!

Chicken

Add 4 tsp of olive oil to frying pan. While pan is heating up, prepare 4 chicken breasts. Rinse it; pat dry. Salt both sides and set chicken in frying pan. Cook on each side 5-7 minutes.

Chop up:

  • Fresh Cilantro to taste
  • 2 teaspoons red pepper flakes
  • 2 tablespoons of butter
  • Chop up a line.

Mix the butter mixture all up and make a butter ball. Set aside.

MEXICAN STREET CORN- WITH ZUCCHINI CAUSE I SAID SO

While chicken is frying, put another frying pan on stove with 2 tsp of olive oil. Heat. Add:

  • Chopped 2 bell red peppers-  Cook 2-3 minutes until peppers start to soften.
  • Corn- Cut corn off 2 cob and add to mixture.
  • MY ADDITION: Add chopped zucchini...as much or little as you want. I added two small zucchini.
  • Add chili seasoning to taste
  • Add 4 tablespoons water.
  • Stir about 30 seconds to a minute and remove from heat. Then;
  • Add about 1/2 cup of sour cream, more cilantro and a squirt of lime juice.

Once you have that prepared, remove chicken from pan and put on plates. Squirt lime juice on chicken. Put a scoop of cilantro butter on each piece of chicken and watch is it melts into an amazing mouth watering buttery sauce. Serve with prepared Mexican Street corn.

This recipe took under 30 minutes from start to finish, and adding the zucchini was just the right touch!
