PIZZA THAT'S DELICIOUS AND GOOD FOR YOU?

It's true! This was a great pizza.  The only thing I want to improve upon is that I like a crispy crust, and this was more of a soft pizza crust. So once you make it, share your crispy crust version with me. Here's the recipe!

DIRECTIONS

Heat oven to 425.  Place a piece of parchment paper on your cookie sheet.

INGREDIENTS FOR CRUST

  • 4 cups chopped fresh spinach
  • 1 egg
  • 1 tsp dried basil
  • 1 cup low fat mozerella shredded cheese

I blended this all up in my food processor. Pour onto parchment paper and back for 20 minutes.

ADD TOPPINGS

Remove crust from oven, and start adding your toppings.

You can add whatever you want..but I kept it healthy. I added chopped peppers, thin tomatoe slices, crumbled mushrooms, chopped onions, feta cheese, and topped it with more mozerella cheese.  I also sprinkled salt and garlic salt over the whole pizza.

Put pizza back in oven and back until cheese is melted...or until you figure out how to get a crispy crust...If you DO figure that out, please send it to me at Kelly@minnesotasnewcountry.com
