Doesn't this look delicious? Here's the shocking part. This banana bread was made especially for a close friend of mine who can't have dairy. I also decided to reduce the calories by using some sugar substitute. It was SO good. I hope you enjoy it. I made 8 mini loaves, and actually added the blueberries at the very end; so you can make some plain banana bread, some blueberry and some chocolate chip, or any other fantastic combo that you can think of.

INGREDIENTS

  • 5 1/2 CUPS MASHED BANANAS
  • 1/2 CUP NON SWEETENED APPLESAUCE
  • 1 1/3 CUPS OF OIL
  • 1 CUP OF WHITE SUGAR
  • 1 CUP OF TRUVIA SUGAR SUBSTITUTE
  • 1/4 CUP OF BROWN SUGAR
  • 4 CUPS OF FLOUR
  • 2 TSP OF BAKING SODA AND BAKING POWDER
  • 2 TBSP OF CINNAMON
  • 1 TBSP OF ALL SPICE
  • 1 1/2 TSP OF SALT
  • 1 CUP RINSED FRESH  BLUEBERRIES OR CHOCOLATE CHIPS

DIRECTIONS

Preheat oven to 350. Spray 8 mini loaf pans with flour/baking spray. (Or 4 regular loaf pans).

Mix mashed bananas, applesauce, oil, sugar, Truvia sugar substitute, brown sugar, cinnamon and allspice together in a large bowl.

I hate it when recipes tell you to mix the dry ingredients in one bowl, and the wet ingredients in the other. So...once you get your wet ingredients all stirred up, pour the flour, salt, baking powder and baking soda on top of the wet ingredients. stir the dry ingredients a bit before stirring them into the wet batter.

The batter should be fairly thick.

You have choice at this stage. If you are just making all blueberry bread, then you can fold your berries in the batter before you pour it into the loaf pans. However; if you are like me, I like to make a wide variety of breads. I pour the batter in my mini pans, and then added berries to a few of them, chocolate chips to a few of them, and left some with just banana bread batter. I took a fork and stirred them carefully in each loaf pan.

Proceed to bake your bread. It takes about 30 minutes for mini loaves. I pull them out when they are still just a tad bit soft in the center, as they firm up resting on the stove top.

Now it's up to you to share!  I really liked this recipe, as it's the first one I haven't used eggs in. Notice there was non dairy as well.
