Kelly’s Kitchen: Tasty Cheesy Crab Zucchini Boats [RECIPE]

If you love Zucchini like I do, you are constantly looking for new recipes and ways to incorporate this delicious veggie in every recipe that you can while the veggie is fresh from our gardens, you'll love this recipe. This recipe is SO tasty, that you'll think it's bad for you. I crave this for weeks once I make it.
This recipe makes about 12 boats.
WHAT YOU'LL NEED
- 3 zucchini
- Finely shredded Parmesan cheese, or a tasty white cheese blend
- butter
- crab or imitation crab 2 pounds
- onions
- peppers
- Mayo - I use Hellman's
DIRECTIONS
Preheat oven to 350 degrees. Fill a pot with water, and bring to a boil. Cut zucchini in half, chop of the ends, and then scoop out the zucchini, leaving a thick shell. (you won't need the zucchini for this recipe, so save it for another recipe, or toss it out.
Place zucchini strips in boiling water for two minutes, and then remove. In a frying pan, add two tablespoons of butter, chopped onions, chopped pepper, salt, pepper, and paprika to taste. Stir until veggies are soft. Add crab meat and heat until the crab or imitation crab is hot. Remove from heat and add about 3 tablespoons of mayo to mixture.
Take melted butter and brush each zucchini top and bottom and then place on baking dish or cookie sheet. Fill each zucchini with mixture. Top with a sprinkle of cheese and Bake on 350 for 20 minutes, or until cheese and mixture is slightly browned.
Remove from oven and enjoy.
