KELLY'S VERY OWN SWEET CHICKEN SALAD RECIPE

You work hard enough through the week, so why not make this tonight and enjoy a great weekend of napping, gardening, and watching the WILD win one for Minnesota.

Sometimes I get a craving; and lately, I've been craving a great chicken salad. Something that has lots of healthy veggies in it. Something that's full of healthy protien, and has a sweet tang to it.  Plus a little healthy fat crunch with some almonds and walnuts never hurt anyone.

The best part of this recipe, is it's tasty, it's sweet; it's packed with healthy veggies, and you can make it even healthier by using plain Greek yogurt instead of mayo. Try it, and tell me what you think. This is my OWN creation.

INGREDIENTS

  • 1 cup chopped up chicken (I baked this in my Air Fryer earlier in the day)
  • 1 cup of seedless green grapes
  • 1/4 cup smoked almonds
  • 1 cup of chopped celery
  • 2 green onions chopped
  • 1/4 cup mayo or plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1/8 cup parsley
  • 1 cup chopped yellow onion
  • 1/8 cup cranberries
  • 1/8 candied walnuts
  • Sprinkle of dill weed

DIRECTIONS

Put everything EXCEPT Mayo and Chicken in a food processor and pulse 4-6 times until everything is nice and chopped evenly.

Pour mixture into a bowl and add plain Greek yogurt or mayo, and chopped chicken. Mix with spoon

THE BEST WAY TO SERVE IT

I toasted my whole wheat bun in my Yedi Air Fryer..which makes the best toast in the world and immediately serve the chicken salad on the bun. It's great for picnics or outings.
