PASTA HAS A DAY

Not just any pasta, Fettuccine Alfredo has a day...and today is the day. So head to the grocery store, get your recipe supplies, and don't feel guilty about eating your delicious pasta dish this one special day of the year.

This versatile dish can be made with beef, shrimp, chicken, or just veggie style. I'm sharing one of my favorites: Shrimp Fettuccine Alfredo. Enjoy!

INGREDIENTS

  • 1 pound fettuccine pasta
  • 1 pound cooked shrimp peeled
  • 1 tablespoon butter
  • 4 cloves of minced garlic
  • 1 cup half and half
  • 5 tablespoons grated parmesan
  • 1 tablespoon chopped parsley
  • Salt to taste

DIRECTIONS

Bring a large pot of water with salt added to a boil. Once the water is boiling add the fettuccine and cook for 8-10 minutes until tender.

In a large skilled, cook and stir shrimp and garlic in the butter for about 1 minute. Then add the half and half and stir. Then add the parmesan, one tablespoon at a time, until it is all added. stir. Then add parsley and salt.

You will want to stir this continually until the sauce thickens, which may take a few minutes. Once your sauce has thickened, pour your fettuccine on a plate, add the sauce and serve immediately.  This is ready in under 20 minutes and makes a great Valentine's Meal served with a glas of wine and candle light!
