It's no secret that I've been on a health kick lately...since January. I grew up on pancakes as a kid and the thought of living without them broke my heart. I found the best alternative--protein pancakes! The best part is, they're flour-less and low calorie. Each pancake will run you about 30 calories. Who says you can't have your pancakes and eat them too?

This recipe is great for the summer because they're light, fit and go so very well with fresh summer berries! Enjoy this delicious breakfast, I sure do!

Ingredients

  • 1 large banana
  • 2 eggs
  • 1/8 teaspoon baking powder
  • 2 tablespoons protein powder (I like using vanilla)
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/2 cup of blueberries

Directions 

I like to use my kitchen mixer to make sure to mash up the banana really well. I add in eggs, baking powder, protein powder vanilla extract and cinnamon together. I mix them up well, until they reach a pancake batter consistency. This recipe may be a little more liquidy than thick pancake batter.

Next, I add in my blueberries and fold them into the batter with a spatula.

I turn stove on medium to low medium. You don't want to start your pancakes off with too high of heat because they are slow to cook. You want to wait to flip your protein pancake until you notice that the top isn't as shiny, there are popped bubbles and it looks like it's nearly cooked through. When the pancake looks like it's nearly cooked through, flip it. Let the other side cook briefly and then enjoy! It is kind of like flipping an egg.

This recipe makes about 7-8 three inch pancakes. I usually measure out 3 tablespoons of batter for each pancake.
