If you are unfamiliar with paczki, it is a traditional Polish dessert that is essentially a filled donut. A small amount of grain alcohol (like Everclear) is added to the dough before cooking and as it evaporates, it prevents the absorption of oil deep into the dough. Polish bakers know what's up.

Paczki's even have their own day, aptly named Paczki Day, which is celebrated on Fat Thursday, the last Thursday before Ash Wednesday and the start of Lent. They are also commonly consumed on Fat Tuesday in the United States as religions and practices have blended over the years.

Ash Wednesday is February 26th this year, making Fat Tuesday the 25th, and Fat Thursday the 20th. So for three solid weeks and some change we will be able to get our hands on these Polish delicacies. Enjoy! And don't look at the calorie count. You'll thank me later for that.
