MORE RECIPES MEANS MORE DELICIOUSNESS

I take all the fresh zucchini from my parents bountiful garden that I can...because it's such a tasty veggie and you can do so much with it! I'm in full baking mode right now; trying variations of different zucchini bread recipes...and this just might be my favorite. It's definitely been a hit with my Co-Workers...who have been so kind with their thank yous for sharing mini loaves with them.  Of course...I have to thank my parents, for sharing their hard worked on garden goods.

Kelly's Pumpkin Zucchini Bread Recipe

  • 6 cups all-purpose flour
  • 3 teaspoon salt
  • 3 teaspoon baking soda
  • 3 teaspoon baking powder
  • 3 tablespoon ground cinnamon
  • 6 eggs
  • 2 cup vegetable oil
  • 5 cups white sugar
  • 6 teaspoons vanilla extract
  • 2 cups grated zucchini
  • 2 cups pumpkin

DIRECTIONS

  • Spray pans. Preheat oven to 325 degrees.
    Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.
    Beat eggs, oil, vanilla, and sugar together in a large bowl then add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini  until well combined. Pour batter into prepared pans.
    Bake for 40 to 60 minutes.

CHOCOLATE ZUCCHINI BREAD RECIPE - YUM!

For you chocolate lovers out there, you might want to try this one.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/4 cup butter
  • 1/4 cup vegetable oil
  • 3/4 cup sugar
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups packed shredded zucchini
  • chocolate chips for sprinkles after baking

Instructions

Preheat your oven to 350°F. Grease pans with nonstick cooking spray.
Mix together the flour, cocoa powder, baking soda, and salt.
In a large bowl, mix the eggs, butter, oil, vanilla, and sugar...then stir in zucchini.
Stir the dry ingredients into the wet ingredients.
Pour batter into prepared pan. Bake for 40-60 minutes.

Once bread is ready to remove from oven, let cool slightly and then sprinkle the chips on top of the bread and let finish cooling.

Once cool, package the zucchini breads and deliver to your friends and family! Enjoy!
