Minnesotans Will Love Kelly’s Easy Veggie Potato Recipe
GREAT WITH ANY MAIN DISH
I just love potatoes; but I know that having potatoes alone isn't the healthiest option available. I decided to throw some of my favorite veggies together and created this tasty side dish that works with any Main course meal.
- Small Potatoes
- Yellow Onion
- Orange Pepper
- Olive Oil
- Garlic Salt
- Black Pepper
Heat oven to 350. Better yet, if you've got a grill, prepare your charcoal grill or gas grill for an extra added grilled steamed flavor. Line a baking dish with tinfoil. If you're going to be throwing it in the grill you'll just need a good tinfoil.
Cut up potatoes, pepper, onion, and whatever other veggies are your favorite. Throw the veggies on the tinfoil with 1/4 cup of olive oil, and season to taste. Mix well. I like to stick with some basic seasonings, like salt, black pepper and garlic salt, but get as fancy as you like. Sometimes...keeping it simple is the best way for me to go.
Close the tinfoil and place in the oven, grill, or charcoal grill. I bake in the oven on 350 for about 40-45 minutes or until the potatoes are the tenderness you prefer.
