Kelly’s Kitchen: One Bowl Lemon Bars
SO SIMPLE...
I spotted this recipe online as I was working the other day. It was so simple, I took 5 minutes out of my workday to whip it up. Jenny has stopped me in my tracks for more than one recipe.
BROWNIE RECIPE
- Heat oven to 350.
- Line a 8 x 8 baking dish with foil paper.
- Put all of these ingredients in a bowl: 1 cup flour, 3/4 c. white sugar, 1/4 tsp salt and baking soda, 2 eggs, 14 cup plain Greek yogurt, 3 tablespoons veggie oil, 2 tablespoons lemon juice. You can also add lemon zest if you want, but I didn't have any real lemons, so I just used 3 tablespoons lemon juice.
Stir by hand until smooth. Pour into prepared baking dish and bake for about 20 minutes.

GLAZE
You don't have to glaze them, but what the heck. It's super easy too. Just take 1 cup of powdered sugar, lemon zest, and 2-4 tablespoons of lemon juice and mix. Add juice slowly until you reach the consistency you like. I didn't want a lot of glaze, so I mixed it well, and just drizzled it over the top of the bars.
In under 20 minutes, you have a super quick snack for everyone in the family. Enjoy!!
