GOOD FOOD

I don't know about you, but the last few days have been stressful. Stress is sometimes met with rather unhealthy food choices that feed that part of your brain that wants something to cheer it up right away; like doughnuts, cookies...a bowl of ice cream.

Then...reality sets it. You start feeling crappy...sleepy...groggy...and realize..Oh yeah...There was a reason I stopped eating that way.

So today...I made an effort to find the joy in creating something bright, cheery and edible. It was inexpensive and I can have a salad a day like this for about 5 days.

INGREDIENTS

  • CHOPPED GREEN PEPPERS 3
  • CHOPPED YELLOW ONION 1
  • 1 CHOPPED HEAD OF GREEN LETTUCE
  • 1 CHOPPED HEAD OF RED CABBAGE
  • 3 TRAYS OF STRAWBERRIES...ON SALE FOR JUST $1 A PIECE  SLICED
  • SHREDDED CHEESE...YOU CHOOSE
  • STRAWBERRY POPPYSEED DRESSING 60 CALORIES FOR 2 TABLESPOONS
  • SMALL BAG OF CRANBERRIES & ALMONDS

I chopped up all of my ingredients and put them separately into bags in the refrigerator...except the strawberries. I sliced them, saved what I was going to use for todays salad, and put the rest in the freezer. They'll keep longer and be a tasty frozen treat atop your salad.

It's pretty simple after that.  Grab a handful of lettuce and cabbage, and throw it on your plate. Grab a handful of chopped peppers, onions, and about 5-10 strawberry slices, and throw it on top. Grab a sprinkle of shredded cheese, as well as a tablespoon of the cranberries and onions. Then top with 2 tablespoons dressing drizzled over salad.

That's it. Healthy...tasty..a little sweet with a little tang. Enjoy!
