Favorite Fall Recipes: Homemade Banana Bread
There’s a crispy in the air and a whiff of banana bread lingering at my house! That’s the sweet treat I made last night, because when the cool weekend weather sets in, so does my need to bake. I have a few favorite fall recipes that I wait all year to make! These recipes have been passed down to me from my mom, to her from her mom and so on.
For my bangin’ banana bread, here’s what you’ll need;
- 3 ripe bananas
- 1 egg
- 1/2 cup vegetable oil (I substitute with olive oil for health)
- 1 tsp baking soda
- 2 cups of flour
- 1/4 tsp salt
- 1 1/8 cups sugar
- 1/2 tsp vanilla extract
- 2 tbsp milk, or buttermilk
- 1/2 cup of walnuts (if you’re not a walnut fan, leave them out–maybe try chocolate chips?)
Preheat your oven to 325 degrees Fahrenheit.
In one large bowl combine the flour, salt, sugar and baking soda. Mix all of the dry ingredients together and then set the bowl aside.
In a second bowl add your bananas and mash them well. The riper the bananas, the better! Once the bananas are all mashed up, mix in your egg, vanilla extract, milk and vegetable oil.
Slowly stir the dry ingredients into your bowl of wet ingredients. Grease your bred pan and pour in the batter. Bake your banana bread mix for about 1 hour and 15 minutes. Check your banana bread after 1 hour and test it by poking a toothpick through the middle of it. If there’s batter on the tooth pick, then bake the bread longer.
