Do you ever get a craving for something, and no other food will do? The kind that makes you want to drop everything, run to the store, and have that exact meal on the table by dinner?

That was me yesterday. I couldn’t stop thinking about a creamy, cozy chicken hotdish. I had the flavors in my head and a pretty solid idea of what I wanted it to taste like. So I made a quick grocery list and headed to the store.

WHERE IS THAT CHICKEN?

Of course, wouldn’t you know it! The one thing I needed most (a rotisserie-style chicken) was nowhere to be found. Everything else was in the cart… except the star of the show. So I did what any true Central Minnesota girl would do—I drove to Kwik Trip.

And there it was. A box of 8 cold chicken tenders, just waiting to become something amazing. I picked it up and thought, “This might be my next favorite recipe in the world.”

KWIK TRIP CHICKEN HOTDISH

So here it is. My Kwik Trip Chicken Hotdish. It’s comforting, creamy, and ridiculously easy to throw together. Perfect for weeknights, meal prep, or just giving in to a craving you can’t ignore.

INGREDIENTS

  • 8 cold Kwik Trip chicken tenders
  • 1 cup sour cream
  • 1 cup whipped cream cheese
  • 1 can of Campbell’s Cream of Chicken Soup
  • 1 (8 oz) bag shredded cheddar cheese
  • 1 bag chopped frozen green peppers
  • 1 bag chopped frozen white onions
  • 1/4 stick salted butter
  • Pam cooking spray
  • Optional seasonings: salt, garlic salt, pepper

Preheat your oven to 350°F and spray a glass baking dish with PAM.

  1. In a mixing bowl, combine Sour cream, whipped cream cheese, and cream of chicken soup.
  2. On a cutting board, chop up the Kwik Trip chicken tenders into bite-sized pieces. Add them to your creamy mixture.

3. In a pan on the stove, melt the butter, then toss in the frozen green peppers and onions. Sauté until they’re hot and slightly golden.

4. Add the sautéed veggies to your mixing bowl. Stir everything together until it’s well combined.

5. Pour the mixture into your prepared baking dish.

6. Top evenly with shredded cheddar cheese, and give it a light sprinkle of salt, garlic salt, and pepper (or your favorite seasonings).

7. Let it rest for 15 minutes before serving.

And just like that, you’ve got yourself a full meal in one pan. Protein, veggies, cheese, comfort... all in one creamy, satisfying swoop.

MAKE IT YOUR OWN

Not a fan of green peppers? Add mushrooms, olives, or even corn. Want to bulk it up a bit more? Mix in some cooked macaroni, wild rice, or hash browns. There’s no wrong way to make this dish. You do you!
