
Kelly’s Kitchen: Simple Green Soup For Sick Days
We've all been there. Everything is going along just fine and then it hits; Your stomach turns, your achy all over. You can't look at food or even think about eating it because you've got a soar throat.
It's important to stay hydrated but hard to get anything down when you're feeling down and out. I decide to make a healthy easy to drink soup that would keep me hydrated, and get some great nutrients as well. It takes about 15 minutes to make, so you can go right back to bed, where you need to be.
INGREDIENTS
- Water or chicken broth 8 cups
- 1 frozen 16 oz package chopped spinach
- 1 packaged 16 oz cut up green onions
- 1 package firm tofu cut up into small squares
Put water/chicken broth in pot and bring to a boil. You can add spinach right out of the package, however, I like to chop it up and then add it to the boiling broth. Also clean and then chop up green onions and add to broth.
You can also add some chopped up tofu to your soup if you like. This makes enough to last a few days, and really helped me get back on the mend. It is a simple soup so it's easy on the stomach, and feels good on sore throats. With chicken broth, it tastes a lot like chicken noodle soup with the noodles.
