Easy Holiday Peanut Butter Blossoms [Recipe]

MY FAVORITE RECIPE FOR PEANUT BUTTER BLOSSOMS

I actually couldn't believe how fast and easy it was to turn out 5 dozen Peanut Butter Blossom cookies in less than an hour, until I found this great recipe online from the New York Times.

INGREDIENTS

1 3/4 c. Flour
1 tsp. Baking Soda
1/2 tsp. Salt
4 oz. Butter, room temperature
1/2 c. Creamy smooth peanut butter
1/2 c. Granulated sugar
1/2 c. Light brown sugar
1 Large egg
1 tbsp. Milk
1 tsp. Vanilla Extract
Non stick cooking spray
11 oz. package of Hershey's Kisses, with foil removed

DIRECTIONS

Heat oven to 375.

In bowl, Sift together flour, baking soda & salt.

In another bowl, mix together butter, peanut butter, and sugars. Once mixed well, add the egg, milk and vanilla. Mix until blended. Gradually add flour mixture. Mix well.

Roll dough into 1 inch balls. Roll each ball in sugar until completely covered. If you have colored granulated sugar, like green or red, it will make a festive Christmas cookie; Otherwise use regular granulated sugar.

Place balls 2 inches apart on baking sheet. Bake for 6-8 minutes, or until lightly brown and puffed.

While the cookies are baking, take the Hershey kisses and remove the foil wrappers and place chocolates into clean bowl.

Once the cookies have baked, remove them from the oven and place one Hershey kiss in the center of each cookie. Let cool.

If you make the balls the right size, you will have 5 dozen. Many people make the dough balls too large. You can do this; just realize you'll end up with far less cookies, and actually the one inch balls make a perfect cookie to chocolate ratio.

You can try lots of different options with this great recipe. Why not try different flavors of Hershey Kisses? Or perhaps use small candy bars rather than kisses altogether? Remember, this is YOUR holiday; spruce it up as you see fit; but the recipe is perfect and my cookies were gone about an hour after they came out of the oven! A sure crowd and kid pleaser.
