NATIONAL COOKIE DAY

Today is National Cookie Day! What a great idea! I think that we should have this day to stay home; make cookies all day, and get together to taste all of the wonderful cookies that our Mothers and Grandmothers have introduced us to.

MY FAVORITE COOKIES

I have fond memories of making cookies with my Grandma Rene (Irene) & Grandma Grow. Grandma Rene would make all kinds of cookies in a day, and she let me help her. Mostly I remember eating the dough, and then having freshly baked homemade chocolate chip cookies with a tall glass of delicious milk.

My favorite cookie is my Grandma Grow's Trilby's. No one else's Trilby's will do. It must be the extra ingredient of love she added to them; Maybe it was because they were only made a couple times during the year; or maybe the fact that she didn't really have a recipe; she just threw a bunch of stuff together and they always turned out. Grandma must have been a fantastic measuring genius.

MY MEMORIES OF GRANDMA'S TRILBY'S

I remember her using a old metal grinder to grind up the raisins and dates to get the texture just right. The cookies started out crispy; but if you let them sit for a few days, they became a soft cookie. I've tried to make these once; it took all day; and I think they turned out poorly. Maybe it's time to try again?

TRILBY'S

Let's make Trilby's! Let's do it! Here's the recipe:

Cookies:

  • 1 1/4 cup flour
  • 1 tsp. baking soda
  • 1/4 tsp.salt
  • 1 cup butter
  • 1 cup brown sugar
  • 1/4 cup hot water
  • 2 cup quick oatmeal

Date Filling

  • 2 cups cut up dates
  • 1/2 cup white sugar
  • 3/4-1 cup water

Sift flour, baking soda & salt. Cream the butter and sugar together slowly. Add dry ingredients alternately with the hot water. Add oatmeal. Form into a log. Wrap in flour wax paper and chill overnight. Cut in 1/4 inch slices and bake on a greased cookie sheet at 350. Allow the cookies to stand a few minutes before removing from pan. Cool. Spread the date filling to make sandwiches. Cook until dates are mushy. Cool before spreading on cookie.

EXTRA'S:

I believe my Grandma Grow added raisins to the date mixture. Now that I've been talking about this; It's going to be my next challenge. stay tuned for a trilby video coming soon!
