
This ‘Cheddar Bay Biscuit Patties Recipe’ Is A Delightful Twist On Tradition
For a new twist on a salmon patty, how about making zucchini patties? As a matter of fact, you can make these as a super inexpensive meal if things are tight.
When I lived in Kentucky, my mother-in-law introduced me to fried green tomatoes, fried zucchini, and she also made a lot of salmon or tuna patties, but this is one recipe that I wish I could have shared with her. Zucchini patties.
EASY TO MAKE PATTIES
To make these patties, you'll need just a few ingredients, and you can eat the patties as a meal all by themselves.

Ingredients
- 1/4 cup of chopped onion
- 2 cups of grated zucchini
- Vegetable Oil - Enough to cover the bottom of an iron skillet
- 1 package of Red Lobster Cheddar Bay Bisquit Mix and a small pack of herb mix
- 1/2 cup shredded cheddar cheese
- Salt and pepper to taste
Directions
- Clean and then shred the zucchini to make 2 cups. Place it on a paper towel or in a strainer to remove as much excess water as possible.
- Add Cheddar Cheese, zucchini, and 1 package of Cheddar Bay Busquit Mix, the small herb packet, as well as the chopped onion in a bowl. Add salt and pepper and mix well.
3. Heat an iron skillet with a thin layer of vegetable oil.
4. Once it's hot, add a big spoonful of mix to the skillet. Once it starts to brown on the bottom, flatten it out and then flip it to brown the other side.
5. Flip the patties until they are golden brown on both sides.

TRY THIS TASTY DIP
- 1/4 cup of Mayo
- 1 squirt of lemon juice
- 2 teaspoons of dill
Mix 1/4 Mayonaise with a squirt of lemon juice and about 2 teaspoons of dill to make a dip for the patties.
Once the patties have rested for a couple of minutes, they are ready to eat. As always, I encourage you to try different additions. Maybe add a little bit of cooked bacon bits. Red pepper might be tasty and eye-catching. Feed all the senses and enjoy cooking.
