I don't bake. I try, but it just never turns out. That is why this recipe is such a big deal! Not only is it low-cal, it is easy enough to make that even I can do it! I add a little brown sugar and chocolate chips to the recipe, so they are just over about 100 calories each, but that is a small price to pay to get my chocolate fix. Plus they are super dense and filling, so they make a great breakfast!

Here is what you will need:

  • 1 cup of flour
  • 1 cup of quick oats
  • 1 tsp of baking soda
  • 1/2 tsp of salt
  • 1 tsp of cinnamon
  • 1/2 cup of unsweetened applesauce (the Mott's applesauce plastic cups are the perfect amount!)
  • 2 eggs (Or just the whites. I personally like to use the whole egg. What am I going to do with 2 separated yolks? Save them for later?!)
  • 1/2 cup of sugar
  • 1/4 cup of light brown sugar
  • 1/2 cup pf water
  • 1/2 cup of semi-sweet chocolate chips

Here is what to do:

  1. Preheat the oven to 350
  2. Prep a 12 cup muffin tin with either cupcake papers or spray it with cooking spray
  3. Mix together dry ingredients (flour, oats, baking soda, salt, cinnamon)
  4. Add in the applesauce, eggs, water and sugar and stir until just mixed.
  5. Add in chocolate chips
  6. Spoon the batter into the muffin tin. You can fill them pretty full, the muffins don't rise too much.
  7. Bake in the oven for 20-25 minutes and enjoy!!

If you substitute blueberries for chocolate chips and only use the egg whites, you should be sitting at about 102 calories per muffin. Not too bad! I store them in a plastic container, and they should last about four days before getting "too dry". Pro-tip: feed the last ones to your co-workers on the 4th day!
