The holidays are right around the corner, and if you're anything like me you have multiple appearances to make. Mom's side of the family, dad's side, plus the gatherings of your significant other's family.  All that hard work at the gym disappears over the course of a month and a half of holiday dishes.

Last year my coworker hooked me up with a recipe for Low-Carb Stuffing and it was a game changer. Even though it was made of different vegetables, and virtually nothing a regular stuffing has, this dish had everyone going back for seconds! It was such a hit that it has been requested in my house off and on all year long.

Pro Tip: Make it and put it in the fridge. It tastes even better when it is reheated the next day!
