I love the fall for many reasons--one of them being crock pot season. I love putting things in a crock pot and letting them cook all day while I'm at work. Coming home after work to a house filled with the smell of wonderful crock pot goodness is amazing. Here's just one of my favorite recipes! Try it at home and let me know what you think. It's definitely a hit at my house!

Slow cooker chicken fajitas

  • 2lbs of chicken breast
  • 2 1/2 tbsp of chili powder
  • 3/4 tbsp of pepper
  • 1 tsp of salt
  • 3/4 tsp coriander, ground
  • 4 cloves of garlic
  • 1 orange and green bell pepper, red
  • 1 can of green chilies petite
  • 1 yellow large onion
  • 1 tbsp of honey
  • 1 tbsp of lemon juice

Cut up your onions and peppers and layer half of them on the bottom of your crop pot. Add your chicken breasts on top of the onions and peppers. Season the chicken with your salt, pepper, chili powder, cloves of garlic, lemon juic and honey. Next, add your can of green chilies and coriander. Put the second layer of onions and peppers on top.

Cook on low heat for 6-8 hours. Take out any extra liquid. Serve on tortillas. I like to add salsa, cheese and sour cream to my tortilla.
