Yesterday, Nashville Kat told us about Miranda Lambert's go-to recipe if company drops by. She calls them "Magic" and, of course, I had to try them.

The cookie recipe is super simple which is why it's perfect for those people who just show up at your place (though, really, shouldn't they be bringing the treats?).

Just throw 1 cup crunchy peanut butter, 1 cup sugar, 1 egg and 1 teaspoon vanilla into a bowl. Mix it, roll it into golf-ball sized balls, crisscross with a fork and bake at 350 for 10 minutes.

I found the dough to be a little too sticky to roll but I used a little cookie scoop and that worked great.

I guess we should have served them to company but it's a good thing we didn't because it's not polite to fight over cookies with guests.

Today, Nashville Kat has Miranda's meatloaf recipe.
