After weeks of looking at recipes and reading about how great this is, I finally made it last night. Cauliflower pizza crust. And......

I loved it! It doesn't taste like regular pizza crust, but it's really good! Here's the recipe I used:

Grate 2 cups of uncooked cauliflower. I just cut mine up, and put it in my blender for a very quick mix.

Put into bowl and microwave for about 8 minutes.

Mix in one egg and mozzarella cheese. I used about 1 1/4 cups--but the amount is up to you. I also sprinkled in a little parmesan cheese.

I put parchment paper on top of my pan. It worked well. I used a spoon to pat out the crust into a rectangle. You can do it however you'd like.

Bake at 425 for 10-15 minutes. Next time I make it, I'm going to bake it a little longer though--so there's a little more brown on top. It was too soft.

Add your toppings and put back into the oven for another 10 minutes.
